Coolerbator Issue...Need Direction!

I have a DIY coolerbator that has had wonderful results for the last 5 years. This past season, I fired it up but recently but have been having issues.

The unit warms up to temp and can hold it fine. The issue occurs after the light clicks off. When it comes back on,there is a buzzing noise and the light will continually flicker with buzzing noise, until it shuts off again and then the pattern repeats.

I have replaced the light unit to see if that was an issue and have repeatedly rewired but I have not been able to figure out the issue. The thermostat is a basic water heater thermostat from Menards and a I have not tried replacing that piece yet. Suggestions?
 
Since you have replaced everything else, the thermostat is all you have left. Before you buy another water heater one, I suggest getting something more precise that won't allow the wider temperature swings.
While you are at it, I think a metallic heat element is much more reliable than a light.
