Hi all! Due to a bit of a miscommunication with my wife...we have an uneven roof for the structure. Probably easier to cut down and move the roof but I’m torn on just moving forward. It looks more drastically uneven because the ground is not level. The structure’s roof is what’s not level but the coop itself is level in the pic. It’s incredibly sturdy - cemented down. Would you move forward or move the roof/cut the tops of the beams? Thank you in advance!

Unfortunately that roof isn't built correctly at all. You have to place your rafters on a solid load bearing surface, not screw them to the sides of uprights. I would for sure remove it and build it correctly... And level.
You also have the issue of not using pressure treated lumber in an area that will be exposed to the elements and having the kiln dried lumber sitting on the concrete.
This is what happens to wood that sits in contact with concrete after a few years.
