Unfortunately I am giving my chickens away, I know it won’t be long before I am itching for more, is there anything special I need to do to "winterize" the coop if there are no chickens? or anything I should do to the run while there are no chickens to make sure it is in good shape for future hens?

As for the coop, thoroughly clean it getting all dust and debris out that could harbor pathogens. A bit of bleach wouldn't hurt. Otherwise the winter cold will destroy many bad things. Air it out well.

For the run. Is it big enough that greenery will grow or do they destroy it immediately?

Pulling the top few inches of phosphorus saturated soil and replaced with fresh will help things grow.
