I'm trying to figure out all of the main coturnix quail colors for fowltalk.org. Any help would be great!

True coturnix should be brown and white. Mostly dark and light brown, with some white and specks of any of them. Beyond that, lie quail that are crosses, and not a picture of true corturnix allelles at work.

Wildtype or Pharaoh is the brown and white coturnix. It actually carries all the genes to create the Italian, Tibetan, English White, Roux, etc. Italian is a golden bird with speckles, Tibetan is very dark brown. Roux is kind of beige. English White/Texas A&M is white obviously. There are more colors, but these are the ones you are likely to find in the US.
