Could someone identify this Older lady

I would say once an EE no longer lays a blue or green eggs it's a mutt. Definition of EE is a hybrid or mutt with blue egg laying parent or ancestor. Once the blue egg gene is gone it really can't even be called an Easter Egger anymore can it? My opinion is no, no it can not.
Newbie question.... does age affect the colouring of the eggs? Part of the reproductive system slowing down?

So would it be safe to assume that EE is just a fancy way of calling a chicken a Heinz 57?

Typically no. They are usually a specific mix with the intention of having the blue egg gene present. She missed the gene, but still has the look. If she were to have offspring, and the father wasn't an EE, Araucana, Ameraucana, or Cream Legbar (i.e. something with the blue egg gene) then her chicks would be considered barnyard mixes.

Oh! Thank you. I am still unsure of all the breeds and such. I have a black star (sex link) so I'm now making mental notes that EE are similar in the breeding. Thank you again. Wonderful info

I wouldn't consider them similar... A black star is a cross that's done with the intention of having sex linked chicks. An EE is a cross (or the result of years of crossing like your hen) with the intention of a specific color egg being laid. Hatchery EE are usually all bred together with the occasional ameraucana thrown in to refresh that blue egg gene.

Got it. So then one is bred for a specific bird the other for a specific egg-ish. That is really cool. I cant thank you enough for the information. I am loving this
