cream line milk

I got a gallon of cream line milk from a dairy in town and it wasn't what I expected. The "cream " looks like butter ( it's yellow ) and i am not sure what to do with it. the milk is wonderful and I thought it would have a cream line like the heavy cream you buy in the stores. I guess I just didn't know what I was buying. My question is what do you do with this butter like stuff at the top?
 
I've gotten milk like that too. I thought it was kinda cool!! I think we put that part in the buttermilk.

What happens if you shake the milk?

In my experience, you just get little chunks of "almost butter" in your milk
