Crevecoeur Personalities - Information Requested

Hi, being new to Crevecoeur breed, I am interested in hearing from members who have them and can tell me something about their personalities.
After obtaining straight run of 5 chicks, two cockerels went into the freezer once they were grown because they would not leave us alone.
They would peck at our heads and feet, rush at us, glare at us. Due to their size it was no problem scaring them off, but I don't like the feeling that I can't turn my back on a rooster.
One of the remaining two cocks is friendly and the other has calmed down after I bopped him on the head a couple of times with a light PVC pipe. He seems to respect me but I am not sure he won't get his dander up again. On the other hand he does eat treats out of my hand.

The fourth cock is the mate to my one and only adult hen, and he is fine around me. You'd think it would be he who is the aggressor since I am near his hen. But he is fine.

Is this a situation where the roos have to mature and calm down or is it a situation where once they are aggressive they will always be aggressive. We have only Orpingtons as our other breed and my Orpington roos are friendly, calm and docile with us.
 
I am also wondering about the Crevecoeurs but had to reply because of my Buff Orpington roo. He is no longer with us. He actually would chase us if we turned our backs to him and run up to kick us. First of all, I bought him and he was supposed to be a pullet but grew into a roo... lol When he was little, he was my favorite pullet because he was sooo friendly and liked being held and petted and then we realized he was not a pullet and it all went downhill from there. From everything I've read, this is quite uncommon for Orpingtons. I will give Orpingtons another try but I am hoping the roo we had will be the exception and not the rule.
