If I put a Turken rooster in the same coop as my BCM hens - do I have to worry about cross breeding?

I bet you can answer that yourself. A rooster will breed any available hens.

Your rooster will mate any hen available. Breeds are a human construction, all he will know is they are hens.

Now, choosing to incubate or hatch the eggs is dependent on you. A rooster mating a hen doesn't result in anything except a happy rooster, incubation is required for a chick to hatch.
