if you wanna preserve the charcoal flavor, you've got to use the first process, split that poor chicken in two halves, roast it on the grill a couple of minutes, particularly on the skin side, then, brush it with some garlic and put two pieces of rosemary and half lemon each half, internal side, and wrap it very well with the aluminum, cook it at least 30 minutes, starting with the skin side up
if you need to quick up this cook put a reverse pot on it to get an oven effect
