So I have a Dorking rooster. Im thinking of getting another breed, maybe a Delaware.

How is crossing a dorking rooster over a delaware hen different than crossing a delaware rooster over a dorking hen?

I think you want the hen from the heavier breed and the rooster from the smaller.

Yes. They tend to inherit the size from the hen. It's not often that a chick will grow to be appreciably bigger than the hen.
