custard recipe needed

My SO is having trouble eating. I have been making simple nourishing things that go down easily. So far I have made tapioca pudding (thank you BYC) and rice pudding. That's all gone now and I thought a nice custard would be a pleasant change. My recipe books are unhelpful. Anybody got a nice tasty custard recipe that is not only good, but easy to make? Thanking you in advance.
 
My regrets that your husband is not feeling able to eat well. I know when I got dentures I was on a soft diet for about a month as my gums healed. I ate soft scrambled eggs, refried beans (from a can), cottage cheese, yoghurt (greek yoghurt is so good for you) with a little jam swirled into it, and lots of fruit based shakes, call them smoothies if you want... Right now a good blender is your friend.

Here's my pastry cream recipe, from my banana cream pie recipe:

Banana Cream Pie


Mis en place:
2 cups milk
1/4 cup white sugar
2 egg yolks
1 egg
1/4 cup cornstarch
1/3 cup white sugar
2 tablespoons butter
1 teaspoon vanilla extract

Preparation:

In 3 qt pan heat the 2 cups milk and 1/4 cup sugar, stir with a whisk while heating. Meanwhile in a stainless steel bowl combine the corn starch and sugar, next add the 2 egg yolks and one whole egg. Whisk until it is a golden and light yellow. The milk should be very hot now. Take it off the stove and add a small amount the the egg/sugar/corn starch mixture, (this is called TEMPERING the eggs), all the while whisk this very briskly, add a tad more hot milk, KEEP WHISKING and then slowly add remaining milk and whisk another few seconds. Now pour this mixture back into your sauce pan and on medium heat simmer and whisk constantly. You will FEEL the custard thicken via the resistance of the whisk in it, fold in vanilla extract. When it is thick remove the pan from heat and pour it back into the stainless steel bowl and place plastic wrap right down on the custard and refrigerate at least one hour. Placing the plastic wrap on TOP of the custard prevents a thin crust from solidifying.

 
Thanks Mike. I printed the recipe out and I'll be off to the kitchen to give it a try. My SO doesn't have any problem with chewing or swallowing. It's his stomach. He had a stomach bypass several years ago and I think he has developed a stricture from scar tissue or something. Until just recently he could eat normally, but now food tends to just sit there in his stomach. So I am looking for nourishing easy to digest foods that will slip down easily. He was able to eat the tapioca and rice puddings I made without any trouble. I thought a custard would be a nice change. Yours sounds both good and something that even I can put together. Now if I can just get him to the doctor............
 
I saw your stomach bypass thread. Do me a favor, pass along a message to him for me:

Go get yourself to a doctor. I too hate and don't trust doctors, BUT you got problems and you need to be back on a normal solid diet fast. The only way to find out what is wrong is to go to a doctor. Don't be a fool, you got a wife that's counting on you being around. You can't let fear or pride keep you from going. You don't wanna leave your wife a widow, the world's a hard enough place already. Get your butt to a doc... Do it for her.
 
Thanks Mike. I did show him your post. I think I have him, with your help, convinced to call the doctor tomorrow so he can at least be seen this coming week. That's progress. He's had so many surgeries and been poked and prodded so much he doesn't want any more. I think your post made him realize he is not the only one impacted here.

It's not like I don't understand your husband's situation. Maybe if I hadn't been such a stubborn scardey cat I could have caught my open field glaucoma five years ago or more and at least delayed longer the loss of my eye sight... Once you are married you have to look at things more responsibly, take into consideration the others in your life you're now responsible for... I know in January when I went to this "specialist" they tested me and poked me and probed me so many times (this is my EYES) that my wife got ****** and left the building. It was like they could not believe that I just couldn't see **** outta my left eye any more. Now they just test the vision in the right eye and pressure in both. If they go for doing any more than that I tell them to quit it. See me, give me refills for my meds and see you next time.
