There is a lot of discussion on roasting younger birds and stewing older birds but what if I wanted to grind up the chicken meat and make sausage? Which chicken would you use? Thanks.
 
Any because when you grind them you break up the muscle connecting tissue so you don't have to worry about it being tough. I just ground up an 8 month rooster and he was mighty tasty.
