The embryo makes a few divisions while the yolk forms inside the hen which is why you see a bull's eye in a fertile egg. Once the egg is laid, development stops. That egg can then be stored without any adverse affects. During this delay in development, eggs can be shipped.
When the egg is incubated, the embryo starts developing again.
I'm getting 4-6 call ducks eggs per day right now. Too bad most are frozen by the time I get them. Once I collect a dozen, I'm firing up the incubator.
