Well... I'm no expert, but I'll tell you this: If you are going to show them, you need a huge beard and muffs, and also a "buff" (not the color) neck.

Here are the weights according to the 2010 American Standard of Perfection by the APA.

Cock: 26 oz. Cockerel: 22 oz.
Hen: 22 oz. Pullet: 20 oz.
 
Sorry I haven't replied. I actually do know of a breeder in CA. His name is David Baker. He has all kinds of varieties. Most people show Quail D'Anvers, but there are other pretty colors like Porcelin, Mottled, Black, and Millie Fleur. I don't have a personal preference, but if you get some cool colors, you will get lots of 1st BVs. (BV= best of variety)
