Deciding on a breed of duck

I am a chef and small farm owner. I am looking for an easy to raise large duck breed that is a good layer. I do love duckfat to cook with so that's not an issue. Bottom line is I'm looking for a TASTY duck I can easily maintain and get eggs. So far I have narrowed down to ancona or buffs. Any advice would be great. I'm looking to make a sustainable flock for me and my chefly buddies. Prob about 15 and raise the eggs for butchering/ new stock.
 
Buffs lay well, mine lay every single day BUT they are not broody.. i don't think the breed generally is.

I find Metzer farms to give good breed info.. i'd perhaps look through their listings..

I have Muscovy here they are super broodies but they have a lowest fat amongst the meat out there. They lay decently, and again reproduce like rabbits.

Must be something in the water here. Actually, there are always exceptions. Romy gets broody, she's a buff. And three of my runners go broody each year - Fünf, Elf, and Sechs.
