From the shot that killed it to gutting and skinning were all under an
hour. My back still aches.

The blood in it's mouth on pic 1 was from the gunshot, not the car hit.

PC you did pretty good considering your experience and situation. I think a lot of people have given you good advice about hanging and skinning. Once you hang one and dress it you won't do it any other way.

I just had to mention that my homeschooled kiddos have had biology lessons with deer and other various animals we have processed from hubby's hunting. I can't imagine a frog in biology when they get old enough is going to be anything but boring! LOL

I dont know if anyone else mentioned it, I didnt see it though (scanning back through....hmm....still dont see it...) the white sinnew (or however you spell it) is best to be taken off as much as possible, it makes it really tough. Think like you're going to filet a fish.... if you have a nice filet knife, it works WONDERFULLY. Just pull it up and through...

I have helped my dh skin a deer and gut etc. It is not that bad, I just look at as

1. feeding our family

2. healthy meat

3. Knowing our food is free of antibiotics and not being tortured like you see in the news

Best of all you did not let the meat rot on the roadside! Kuddos!!
 
ok, kind of related

can someone explain why: deer is venison, pig is pork/ham, cow is beef, but chicken and turkey are chicken and turkey? (and fish, bison, alligator...)


back on topic:

I had venison long, long ago. Like 1985ish. I was tricked into it at some moose/elk club. I was still eating beef then, and they told me it was special beef stew, special like steak tips. well, can't say i didn't go back for seconds.
