I don't even know how many people here are interested in this kind of thing, so I'm not printing out the whole recipe, but I just made Dana Carpender's "Cheesecake To Go With Fruit" from 500 Low-Carb Recipes, and it is to DIE. I have not enjoyed previous desserts I've made that were low-carb adaptations, but this one is just nine kinds of awesome. I made it with a crushed almond crust, and topped it with local strawberries (frozen, then thawed, then crushed up with a bit of Splenda). Ho-lee COW. 6-8 grams of carbs per serving, depending on how you do the crust and the topping.
My dinner tonight only had 2g carb, so this was perfect for dessert, and kept me well within appropriate levels of carb intake.
