The winner prepared a stuffed, braised quail for her entree. Now, personally, I was a little concerned with the fact that Gordon Ramsey and the other chefs were happy with the fact that is was still "pink" in the breast meat. To me, that indicates that not only the breast meat but also the stuffing was possibly not cooked to a safe temperature. And the skin seemed a little uneven, partially browned but partially more like boiled. But, I thought the comments on how difficult quail is to prepare properly were interesting, and it was kind of fun so see someone cook something other than your basic chicken, beef, or pork.
