Summer is around the corner, with BBQ's, Cocktail parties, and lemonade on the porch . . . some of my favorite recipes are appetizers - especialy dips and CHEESE dips. How about we start a thread on that topic, every one post a few favorites. I made a new one last night that was OUT OF THIS WORLD, I'll start there

Katy's Thai Dip
Into the blender goes:

1 can coconut milk
2 T siracha
3 T soy sauce
2 T lime juice
2 T grated fresh Ginger
3 T peanut butter

blend it well & your done! store in the frig to thicken - (no mayo to go bad and a warm summer afternoon!)

Chopped cilantro for garnish

serve with carrots, leeks etc for dipping.

by the way totally vegan too!

I love good dips, they can make a party! Here are some of my favorites.

Plain old onion dip...16 ounces of sour cream and a package of onion soup mix
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

Baked Dip

1-1/2 cups sour cream
1-8 ounce block of cream cheese - chopped into pieces
4 cups of shredded sharp cheddar cheese
1 small bunch of green onions - chopped
1 whole pouch of real bacon bits (I the pouch is maybe 4 or 6 ounces)

Place sour cream in electric mixer bowl and mix for a few seconds to lubricate the bowl, it makes mixing the cream cheese easier.

With the mixer running, drop the cream cheese pieces in, mixing well after each addition. Add the rest of the ingredients and mix well.

Place in a baking dish and bake at 350° until hot a bubbly.

Serve hot with Ritz crackers.

Casa Ole Green Sauce

Ingredients:
4 Avocados
1 (16 oz.) container Sour Cream
1 can Rotel tomatoes
1 Tbsp. Garlic Powder
1 (4 oz.) can Green Chili Peppers
2 tsp. Salt
1 tsp. Lemon juice
4 oz. Cream Cheese

Preparation Instructions:
Place all ingredients into a large food processor or a blender, process or blend until smooth.

Serve with tortilla chips.

Chili Con Queso
Ingredients
· 2 pound package of Velveeta
· 1 can Rotel tomatoes
· 1 cup of heavy cream
· 2 tablespoons cornstarch

Directions
Dissolve the cornstarch in a small amount of the cream. Mix all ingredients together in a large microwave safe dish. Heat and stir until everything is melted together. Serve warm with tortilla chips.

Bean Dip
1 (15 ounce) can refried beans
5 slices bottled jalapenos (nacho slices)
1 tablespoon brine, from bottled jalapeno slices
1/2 teaspoon salt
1/2 teaspoon granulated sugar
1/4 teaspoon onion powder
1/4 teaspoon paprika
1/8 teaspoon garlic powder
1/8 teaspoon cayenne pepper

Combine refried beans with the other ingredients in a food processor.
Puree ingredients on high speed until smooth.
Cover and chill for at least an hour before serving.

Taco Dip

1-pint sour cream
1 package taco seasoning
4 avocados
2 or 3 cans bean dip
Grated cheddar cheese
1/2 head of shredded lettuce
1 large or 2 medium tomatoes, chopped
Chopped green onions

First layer: In a 9x13" pan spread the bean dip.

Second layer: Make guacamole out of avocados and spread over the bean dip.

Third layer: Mix taco seasoning with sour cream and spread over the guacamole.

Top: Sprinkle with lettuce, tomatoes, grated cheddar cheese, and green onions.
 
I got this one from a nurse I used to work with - she called it Crack Dip because it's addictive:

1 can chicken breast
8oz cream cheese softened
1 cup shredded cheese
1/2 cup Frank's hotwing sauce (relatively mild hot sauce)
1/2 cup ranch dressing

Mix all together & serve with veggie dippers & crackers

This was from a Kraft Foods website:

SPICY CORN DIP
2 cups canned or thawed frozen corn kernels
8oz cream cheese softened
1 cup chopped tomato
1-1/2 cups shredded cheese
1 tablespon pickled jalapenos chopped
1/4 teaspoon chili powder

mix all together & heat until bubbly
Serve with tortilla chips
 
Really easy dip.

1 can of no bean chilli to each 8oz. package of cream cheese. Heat melt stir well together. Great with cheese dorritos or ritz crackers. Everyone usually loves it....here anyways.
 
This is a winner! My sister made this for Thanksgiving a few years ago and I have made it since then.

Jalapeno Popper Spread

2 (8 ounce) packages cream cheese, softened
1 cup mayonnaise
1 (4 ounce) can chopped green chilies, drained
2 ounces canned diced jalapeno peppers, drained
1 cup grated Parmesan cheese

Directions
1.Stir together cream cheese and mayonnaise in a large bowl until smooth. Stir in green chiles and jalapeno peppers. Pour mixture into a microwave safe serving dish, and sprinkle with Parmesan cheese.
2.Microwave on High until hot, about 3 minutes.
