DIY waterer? Any ideas?

Actually, if they’re airtight, the water won’t come out. A little will come out and then none will. The vacuum created by the airtight seal prevents it from escaping. I had this happen once with a 5 gal bucket with its lid completely sealed.

Yup, very important. Just drill a small hole in the lid or near the top of the bucket and that'll solve the issue. Others suggest putting the lid on loosely but a small hole takes the guesswork out of it.

We use the horizontal nipples too. They waste a little bit of water, but using 15 gallon barrels for 15 - 20 chickens in each coop. The store bought ones require way too much maintenance and fail a lot or have to be cleaned all the time.

It's amazing how high chicken poop and mud will splatter in a heavy rain! I has the 6.5 gallon waterer 12" off the ground and it still had poo and dirt all in the bottom. I think the nipples are much clear, but they dig all through their poo all day inside and let them out and they ravage other animals poo if they can find it.
