I have noticed my chickens show no interest in my fava bean plants when I let them out of their run. Would this mean that if I grew them in their run, would they not eat them? (Assuming they do not step on/scratch up the sprouts) Thank you.

In a nutshell, chickens can eat most things people should eat. The issue I see is that legumes need cooking or a heat treatment to make them safe to eat for either species.
Considering your situation, I really don't think the chickens will leave the plants alone long enough for the plants to produce beans.
Likely they will just scratch the ground before the plants have a chance to sprout. If they do sprout and grow, they'll peck at the leaves and flowers stripping them.

My chickens don't like the faba beans found in high protein pigeon food but they eat them anyway. My rooster and large dual purpose hens like them the most. Bantams don't eat them.
