I just started using duck eggs. (I'm swimming in call duck eggs right now....) I used some for scrambled eggs and really didn't think they were much different (few chicken eggs in there too). Also been using them for cream pies, mac salad, etc. All great! The shells are definitely tougher and the eggs in general seem to be "sturdier", but I don't think anyone would notice the difference.

(and home grown eggs are SOOO much better than store-bought)

My call duck is laying. Are call duck eggs good to eat like standard duck eggs? My dog loves to eat raw chicken eggs, but won't touch a call duck egg, so it made me cautious about eating one myself.

Duck eggs don't taste much different than chicken eggs to me. Maybe a little "eggier" but they're..... eggs..

My mom said she made a cake with them the other day and it is was the most moist cake she had ever eaten. I think its kinda like margarine vs butter. Butter is higher in fat and makes food taste a little bit better but no so much of a difference that you cant use margarine and get the same flavoring.

Duck eggs are great.

I love baking with them in ANYTHING. I eat them anyway you can eat an egg.

I think there taste is more rich then a chicken egg. Once you try one you never will go back.

Sometimes people that are allergic to chicken eggs can eat duck eggs instead. Just like if someone is allergic to cows milk but they can drink goats milk. They have more protien in them that is what makes them better for baking with and have a more rich flavor.

Duck eggs have a lower water content so they cause less glutenization with flour making cakes fluffier. They also make soufles and custards richer. BUT! Best to use half duck and half chicken eggs in most recipes. The absolute best scrambled eggs or omelets are half and half.

They are actually too rich with too much yolk for egg salad in my opinion. I use 2 chicken to 1 duck for eggs salads.

For fried eggs the cook faster and are far more solid. My neighbor calls them steak eggs, but they are sturdier and way richer than a fried chicken egg.

Hard bolied, they have a tendency to be very rubbery.

I've cooked with ducks eggs for years and would never go back to just chicken eggs.
