do I count day one or not?

I set my eggs the evening of 12 June (chicken) and I am on day 20. They should hatch tomorrow day 21 for them. Today is day 17 for you but depending on your incubator temps it could take up to 18 days without too much worry. I had a back that didn't start to hatch until day 23 (chickens). Now I am using a brood hen instead of an incubator because I hate the temp problems with some bators.
 
I think you got your answer on what is day one, but at the risk of confusing the issue let me try something that might help people remember. An egg does not get one full day of development the instant it goes in the incubator. It takes 24 hours of development for it to develop 24 hours. If you candle an egg 7 days and 1 second after you set it in the incubator, you should look at the pictures for 7 days of develop, not 8. I'm not sure when lockdown is with quail eggs, but with chicken eggs, lockdown should be after 18 full days of development, not 17 days and 1 second. I doesn't have to be exactly 18 days. A few hours each way probably won't matter. But the target should be after 18 days of development, not at the start of the 18th day of development.
