In the future I want to but a banged(but functional) house on a big old lot so I can have chickens, goats, and bunnies for meat. But I think I would like an ostrich or emu, for the fun of it but it would be cool if they lay eggs every now again!

Emu only lay eggs during a certain season... like peafowl. Typically Sept (breeding can begin) - June I believe. Emu are better tempered than on Ostrich and less deadly.

And from what I have read you must have both a male and a female or else the female will NOT lay eggs.

Just make sure you have eyes in the back of your head when you collect the eggs. Also, the eggs are huge. To put it another way, I doubt you and your family will finish one in a single sitting.
