Do the eggs affect the humidity level?

I would aim for 40-45% humidity for the first 18 days.... in my experience anything over 50% is too high.

Also it's not the 'amount' of water that gives you the humidity change.... its the size of surface area of water. So experiment with a couple of different sized containers to see how the amount of water surface area affects the humidity.

Would you say around 35% is okay? That’s what it’s running at right now, I have some water in there in bottle caps. I have no eggs in yet though so it could raise a bit

The temp needs to be 37.5°C (not sure if it was just a typo when you wrote 38.5)

I have around 45% (40-50%) the first 18 days and 60% in lockdown

Just adjust it over the first few days of incubation to get it to 40 ish
