They take their bbq very seriously here, and it is meat slow cooked over smoke with low heat...meat and cooking technique are what it is about. Anything else is just grilled.
 
To set the record straight BBQ is a method of cooking, Brisket is just a cut of meat. With that said BBQ is the method of cooking slow and low over indirect heat and smoking is an enhancement byproduct of that method. Grilling is cooking over hot direct coals and is a faster method, like cooking hamburgers & hotdogs, steak, Kabobs ect. You can however cook ribs and brisket over a direct flame but then you are grilling it not BBQing it, BBQ can only be achieved by using coals of wood or charcol and gas grills will never be considered BBQ ever ever. BBQing in the true sense is going by the wayside as in this day and age folks prefer speed to sacrifice flavor, BBQ infuses flavor by use of the method of cookin and this can take many many hours in a labor of love, that which gas grill guys would never consider trying simply because it takes tooooo long. That is also why you have seen the surge in marinating meat as a way to speed up the cooking process and infuse artificial flavor as a crutch to the meat. This is posted by someone who BBQ's 100's of lbs of meat every yr, and I guess you can figure out I do not own a shinney gas anything LOL.

It's OK I use an alias when I'm in Tx. And I would agree with you that Texans take their beef very seriously. Several years ago I spent some time in San Antonio. Best steaks etc I have ever eaten. Now I won't order beef here in a restaurant- just doesn't compare.
We do, do the best BBQ Salmon here though. The recipe varies a bit, but it is usually a VERY VERY sweet. Think Honey and Brown Sugar, maybe dill and garlic.

Foolish me I believed someone who makes his living writeing and teaching BBQ when al I had to do was come to a chicken website and ask. I guess the gas grill and book will be going to the dump next weekend.

LOL I am speaking of a purest point of view, this has fueled many a heated exchange, but in my defense if you ever go to a BBQ cook off or compition the only gas you will find on the premises is used to light Tiki Torches. That is all I am saying, LOL it's like comparing a old muscle car (BBQ) to a Prius (Gas) not even in the same league.
When cooking your brisket all you did was grill it while adding some smoke, and 6 hrs for a brisket is unheard of most good briskets will take at least 12 depending on size in a true smoker done right. and that is a fact my gas grill guru. LOL I hope you don't mind the light banter it makes the great debate more fun.

LOL I just went to your posted link, these guy's look like they couldn't spell real BBQ, the pic is missing them holding a piccalo glass of Chardoney with their pinky fingers held out LOL, come you can do better than that.

I am with Al, gas grills aren't "really" BBQ. Sure you can BBQ with it, but will it be as good as an all wood fire BBQ....heck no! Oh, and you aint done BBQ until you have pulled an all-nighter. I recently smoked a brisket for 25 hours, yum!
