I never noticed a problem frying my eggs. I know my omelets are coming out easier. All I use for frying are cast iron pans. To me, you can't beat them, especially when you kids are learning to cook. As far as hard boil eggs, I would prefer to beat my head against a wall before trying to peal any egg that isn't at least 10 days old. I have a separate tray marked for hard boiling with a date on it.
