Do you have an home made hollindase sauce recipe?

Ok, was reading the poached egg thread.. And can you belive I now have a craving for eggs benny?

I usually use a pack to make the sauce.. I know I suck.. I've made it from sratch once, but it never really turned out..

What are your tricks?

Wish I could watch the video but I live too far out to get high speed internet...all we have is dial up. Bummer!!!

Blender Hollandaise Sauce

· 3 egg yolks – room temperature
· 1/4 teaspoon Dijon mustard
· 1 tablespoon lemon juice
· 1 dash Tabasco
· 1/2 cup butter – melted and bubbling hot

Put the eggs mustard, lemon juice and Tabasco in a blender and turn it on. Drizzle the bubbling hot butter into the eggs in a slow stream. It will thicken nicely if the butter is "bubbling " hot when added.

I have been using this recipe for over 20 years and it works great every time.
