How do you eat it?

With a fork? Sorry, JK! Peel, cut it in slices, bread and fry it, and layer it in lasagne instead of pasta. OR, cut in slices, put mozzarella cheese and spaghetti sauce on it in a baking dish and bake it, put parmesan cheese on it and bake it some more, that's eggplant parmesan. Google that too for more detail. It's good!
