Do you pluck or shuck?

Just wondering how many of you skin your birds vs. plucking them. I've done it both ways. Shucking is a lot faster, but you lose out on that good crispy skin when you fry it. Skin has a lot of fat in it too which is good for chicken and dumplings. Anyway, I was just curious which way most of you do it.

Meaties get plucked....so easy it's like wiping feathers off of them!

Old dual purpose birds get shucked....harder to pluck and I don't think I'd like to eat their old, thin skin anyway. Meatie skin is useful in making good chicken stock and for keeping the birds moist when they are roasted.

Pluck most of the time, unless it's bantams - those I skin. Sometimes I'll skin an older bird if I don't feel like plucking, but usually, I pluck.

I'll be an odd one out and say Skin. If I want a roast chicken or something I pluck, but most of the time it's for the dogs, so I do a nice quick skinning job.

Barefootmom, I love that plucker you have. I made one out of a drill, but haven't tried it out yet. Yours looks great.
