I use a "practice roost" in my brooder. Typically at a week or so old they'll begin playing on it. By two weeks there will be a couple who'll roost on it over night if the temperature is warm enough. Gradually more and more will do so. There are always some laggards though that still won't roost when they're two months old, but by that age they're the exceptions. Eventually they all figure it out if there's enough space for them all.
I've got a box of Leghorns that hatched on January 28. About a third of them are roosting now at night. Seems like every night when I go to lock up I notice one or two more than there were the night before.
