Does anyone eat goat?

glad I found this thread, I have a little buckling I was debating on either taking to the sale or eating. Im thinking I want to try but now to find someone to butcher him.
 
Shouldn't they be castrated (wethered? wetherized? LOL! ) before butchering? [edit] - this is mostly to silverfilly, I know the OP said their's was a wether]

I've eaten goat meat, in several countries, in several ways, but never been around goats raised for meat. Sounds like a plan though, I think there's a growing market for them, I lived in the Denver area and the Halal market I went to for spices, (an excellent place to go for spices BTW if any of you have access to one) and they had a large freezer section of goat meat.

Many parts of the world prefer for the males to be left intact...around here we castrate. Yes the market for goat is growing especially for exports...although the local markets are growing as well
 
I live in Texas so the Mexican way of cooking is quite big here. Goats are VERY GOOD! That being said, you can't just cook them like a fat cow or something and expect any good results. The meat can be quite tough if not cooked low and slow. BBQ'd goat is super but you can expect to low smoke for at least 12 hours.
 
We enjoy having goat as well. I agree with firebug fab as well. Need to cook slow and long to be tender.
We like to cook our goats in the ground. Pretty tasty!

I am a goat meat lover and share one every six months or so with a friend

Caribbean goat curry is wonderful also you can make jerked goat

a goat leg packed in cracked pepper and slow grilled with apple or cherry wood is to die for

also if it is not a baby do it Mexican style in mild (not overwhelming because the flavor will be lost) red chile sauce

a regular stew, the bones make great soups

goat tacos
goat chops grilled lightly with just salt and pepper

ok now I want to order another goat !
 
Many years ago we butchered a young buck and it tasted more like lamb to us. It is not easy to butcher anything, especially a young goat. DH did the dirty job; I would likely be a vegetarian if I had to do it. Young goats are so cute, bouncing off the wall when only a few days old.
