Now that I have a grand total of 6 thermometers in my incubator and have decided which are accurate and which aren't, I am on a quest to find the most accurate, fool-proof way of checking humidity levels. For goose eggs, humidity is important. Is there a specific model / type of hydrometer that anyone can suggest?

I bought both the $6 and $9 thermometer/hygrometers (Accurite brand) from Walmart. I did the salt water test thing to see how much they were off and have just gone with that. (Do a search for calibrating hygrometers either on here or google it.) It must be working okay as I have one baby fresh out and three more pips this morning!

Your most accurate ones are wet bulb thermometers, which is a regular glass thermometer in mercury or spirit, with a wick attached to read humidity. The good glass thermometers are pricy but they are the most accurate.
