does the ceiling of the coop need insulation?

Up to you. Most people don't insulate at all, except in places like Alaska. Be sure you have enough ventilation, too.
 
For those of you that don't insulate, how do you keep your water from freezing? I guess it depends upon your watering system too, but I'm sort of worried about that. Wouldn't insulation help keep some of the chicken's heat in the coop and therefore keep the water temperature above freezing? Heat rises so I'd think insulation in the ceiling would be a good thing.

my water does freeze on the top but since I take fresh water out every morning, I just break off the ice and it seems to do the trick.. you can buy heated waterers but so far I've been able to keep up with the little ice it gets so I won't buy one. It's also only "very cold" here for about 6-8 weeks from mid January to mid March. So other then that time they're mostly still outside.
