It depends on how much prey instinct your dog has. If your dog likes to chase small things of any type--say, if you throw a small fluffy toy, and he chases it automatically--then it is fairly likely your dog will never be safe around chickens. It's one thing to train a very very smart dog to do tricks in response to treats or praise, and they can restrain themselves up up to a point, but they can't ignore their instincts always forever. Most training involves teaching the dog to re-direct its instinct, not ignore it.

Agree with the other posters, your best bet is to keep the dog far from the chickens as if he were a predator.
