One of my girls lays only double yolks, She has only been laying for about 2 weeks now but almost every egg I have collected from her has been double yolk. Is this normal and is it possible that she will lay mostly double yolk?

She should stop that pretty soon. Some hens have glitches in their reproductive start up. When ever she goes out of lay and then starts laying again, she might do that. I've had birds who have done that and were otherwise just fine.

What breed bird is she?

Production breeds are more likely to lay double yolks at onset of lay.

Double yolks are also more likely to happen within the first month of so of laying.....
...until the system gets in tune.
