Down to just one bird

I am down to just one hen. Only started with three, as we live in town and city ordinance only allows three. We want to get two more layers to add to the coop. Any suggestions on how to integrate them? The one we do have left is a barred rock and she is super fussy. Also, I was wondering if I were to move from a free feeding method (as the squirrels, mice and birds are having a hay day) how often would I feed and how much? We have always just filled the feeder and really haven't had any issues with the critters mentioned. But this summer they are EVERYWHERE! Appreciate any advice or experience someone might lend.
 
How old is your hen and how long has she been alone?
I leave my feeders out, but am thinking of putting them away every night into a metal trash can.
I feed 1 cup per bird. Most of it is gone at the end of the day.
