One of my hens can hardly walk. She drags her back end and has poop all over her back end.

Do you have a picture of her butt for us to see?

In any case you could give her a bath with warm epsom salt water and carefully clean off the mess. Dry her off thoroughly afterwards and take the picture.

How old is this hen and when did she last lay an egg?
When did you last deworm your chickens?

Dragging her backend and hardly being able to walk could hint to ascites/water belly or having an egg stuck/ egg binding.
