Dreaming of Spring Gardening in the Middle of a Wisconsin winter part 2

We are big vegetable eaters. I cook from scratch. My DH has a fasting glucose of 80 to 84. :rant I think genetically I don’t process carbs efficiently. I’ve never been overweight either so it’s been a very humbling experience.
We eat a lot of vegetables here too. I'm a vegetarian so husband gets multiple servings of vegetables.
 
I bought the test strips, she does not have diabetes ❣️. She just loves to eat and would be a hundred pounds if she was allowed to 😂 I'll have to keep checking into the urine problem, maybe she needs surgery. And I still think she drinks more water than she used to. It's not easy diapering an Aussie 😜

That's good news. Seems older dogs often start drinking more in my experiences. Aussies in general like to eat and drink. I think their motto is "nothing in moderation".

I haven't checked it for a few days.
some people let it ferment for a few weeks. I started this on halloween eve.. so today is day ten.
today my brother and I went to a seminar given by a funeral home explaining the funeral benefits of the VA. contrary to what a lot of us believed, it amounts to nothing. all funeral expenses are your own responsibility.
they enticed us there with a promise of a meal. tomato soup, a roll up sandwich and potato chips.. at least is wasn't C Rations . lol

I agree, Jim, kraut is done when you like the taste. I was told to let mine ferment for 14 days, but because my house is cooler than most, I let it go a few days extra. When I told the girl at the Extension office that my kraut was crisp and crunchy, she said I should have let it go longer. No. I like it crisp and crunchy. Almost squeaks against the teeth like a fresh cheese curd.

I will not be going to the canning workshop today because while I was back home last weekend I picked up some kind of virus -- mostly hacking coughs and laryngitis. Don't want to pass that along to anyone else; wish whoever gave it to me had stayed home from the party.

I knew the VA didn't really help with funeral benefits. My Jim's son and I footed the bills on our own. At least Christopher got the traditional triangle-folded American flag.

I will be staying home today. But when Jim was alive, we would do the "tour" of every place that served free Veterans Day food. And shopped all the places that offered vets discounts.

One of my favorite Veterans Day memories is eating breakfast at Hy-Vee some years ago and seeing a WWII Army vet, standing quite erect and proudly outfitted in his dress uniform, which still fit to a T. I still have Jim's but I'm sure no force on earth could have shoehorned him into it.
 
Barb, I like the kraut not quite all soft also.
as long as it is beyond raw cabbage taste.
if it is cooked, the raw cabbage taste is OK too
some of the recipes I looked at for ribs and kraut said to rinse and drain the kraut. and then it said to add pepper and salt to taste..
I am not going to do that..maybe the salt in the kraut is a little much, but I don't want to dilute the flavor..
actually, there were some C rats that weren't too bad. on convoys we dragged a trailer behind our duece and a half with a generator motor running. we would walk on the trailer tongue and put the cans of C rats on the engine manifold to warm them up.
non of the brass knew we did this..
Annie's cold lasted about three days.. I resisted her germs.. I very seldom catch cold or flu..
