Rosted Corn Salsa
Fill a baked potato with a spoonful of sour cream and top with this fragrant salsa for a
Super light lunch. Remember to choose the freshest, juiciest corn cobs
serves 8
4 corn cobs
Freshly squeezed juice of 2 Limes
4 Tomatoes, seeded and finely Diced
2 Red onions, finely chopped
4 tbsp chopped fresh cilantro
3 tbsp olive oil
Salt and freshly ground black pepper

1 brush the corn cobs with a little of lime juice and sprinkle with salt.
Slowly barbecue or Broil for 20-30 minutes, turning them over occasionally,
Until tender and golden. Using a large, heavy knife, slice down the cobs to remove the kernels.

2 place the corn Kernels in a bowl with tomatoes, red onions, and cilantro.
Whisk together the olive oil and remaining lime Juice. Season to taste and pour over salsa.
Toss well to mix and serve while still slightly warm, or leave to cool, and chill for up to 2 hours.

Pico De Gallo

There are many versions of this Mexican salsa, whose title translates as " Rooster's Beak"
Here's my Version, which is best spooned on to cheese covered tacos and burritos or
Drizzled over sizzling chicken or beef.

serves 6
4 tomatoes, roughly chopped
1 red onion, finely chopped
10 radishes, roughly chopped
2 green chilies, seeded and finely chopped
2 tbsp chopped fresh cilantro
Freshly squeezed juice of 1 lime
1/4 tsp salt

Place all the ingredients in a large bowl and toss together.
Serve immediately.
