Sunshine Salsa

This beautiful salsa really does bring the ray of sunshine to the dining table.
Serve as a refreshing accompaniment to fish.


serves 4
2 yellow tomatoes, thinly sliced
2 red tomatoes, thinly sliced
2 small oranges, peeled, and thinly sliced in to rounds
1 tsp bottle pink peppercorns, lightly crushed
1 garlic clove, finely chopped
2 tbsp chopped fresh parsley, coriander or chives
2 tbsp extra virgin olive oil
Salt and freshly ground black pepper

1 arrange the tomatoes and orange slices on a large round serving platter.

2 whisk together the peppercorns, garlic, herbs, olive oil and plenty of seasoning.
Drizzle over the salsa and serve immediately.
