I REAAALLY recommend barred rocks. good layers, handle cold and heat well, too! And are easy to tame!

sadly i dont have any but they say white leghorns are one of the best layers.

I personally feel that you are wrong on both accounts. It sounds to me like you may have only had or met the few birds in the breed that are actually skittish or aggressive.

I have two Leghorns, and two Buff Orps, and those four are the sweetest of my seven hens.

It all depends all the specific bird, not necessarily the breed. But for the most part, Leghorns and Orpingtons are very friendly birds, if tamed correctly. Some birds are harder to tame than others though.
