Duck Eggs, what should I do with them

That's exactly it. The texture and richness. Unfortunately, I don't bake much any more due to wheat intolerance and blood sugar issues, but I do use duck eggs in recipes like crustless quiche, almond meal pancakes, cauliflower bake, etc... and they are delicious.
 
The higher protein in duck eggs give baked good a higher rise that will stay that way (I have started using them in my bread), and the higher fat content gives baked goods a richer taste. I could not tell the difference in taste in the bread, and have not used them for cakes yet.
 
I guess i will have to so some baking
