Duck Eggs...Why are they so good for baking?

Quote:
My health is too important to ruin it on cake. Now sugar-free cheesecake I CAN have...but hubby doesn't know how to make it so I have to do it myself!

My 16 y/o son is the cheese cake maker. He does a great job and everyone loves them. Unfortunately, I don't really like cheese cake.

Now I am even more eggcited to get ducks, I love to bake and I knew that duck eggs were great for baking, but now I can't wait!

EAT 'EM ! Gosh, I love duck eggs for breakfast! I am actually preferring them to chicken eggs. We are getting a dozen a day and can't find enough ways to use them.

can i ask, how often they lay? i have a cayuga and a peking.... very little still, what can i expect?

Not sure about these two breeds, but if you love duck eggs, you might want to consider a khaki campbell or an indian runner. They lay an egg almost every day.
