Okay I if you are doing chickens a turner is fine. Ducks on the other hand need to be fully rotated. Opening the incubator will be just fine! As long as you don’t let it open for like an hour. It’s only when you are in lockdown you should be worried about opening it too much. And once you get to day 10 (for ducks) I took all my duck eggs out of the incubator laid them on a towel and sprayed them with warm water. Then I wiped them down let them rest out of the incubator for 5-10 minutes and then popped them back in. All my eggs developed. I had no duds. So don’t be too worried about opening the incubator when your turning them.
So chicken eggs you can just leave with a turner and then do the other necessary steps to hatch those out but hand turning duck eggs 3-5 times a day has always worked for me. I usually turn them at breakfast, lunch, dinner, and bed time.
