Duck and goose meat is spectacular. I raise great chicken here. But, given the choice between chicken and duck I'd almost always have the duck. If you are the kind of person who takes the thigh meat over the breast meat (on a chicken) or find yourself going straight for the legs on a turkey (instead of the boring white breast meat) then duck and goose is for you!
We had a goose for our Thanksgiving with a sauce made from reduced port. It blew us away. I'm finding my customers agree. I already have orders for next year and the geese were just delivered two weeks ago.
Comparing the two, I'd say goose has a taste and texture closer to beef than the duck does. But the two are very similar in taste.
Turkey legs are great too. I know at the fair here we have a stand that sells turkey legs! My dad was ticked when he couldn't get a good leg, because the day we were at the fair the turkey legs were all rubbery and tough! And my dad never gets ticked.
