So, I was just wondering what is normal duckling poop look like? Assuming there on the right diet etc mine will sometimes have white in their feces

There is almost no "normal" duck poop. Ducks are omnivores and the "look & feel" (shiver!) of their poops highly depends on what they have eaten. For example if i feed my ducks ½ red cabbage in the evening, there will be pale green poop all over the duck house in the morning. During the time when they were all out to devour frogs, toads nutes, eggs and tadpoles they produced a stinky runny black diarrhea like poop due to excessive protein consumption. - All pretty normal!
The only concerning kind of duck poop is something bright neon-green. That can mean your duck isn't eating at all and excreting bile. And of course if there's no poop at all that's i sign of trouble.
