You can do it Wildsky! Have you seen my post on butchering a chicken? Do the same thing except pluck instead of skin. If you need the link I can find it for you. DW helps me with mine and while I was out of town she did a couple by herself. (Chickens that is.)

I think it's lessabout being female and more about being smaller. My local chicken and duck breeder friend even needed help, and he's a full size man and had a teenage boy helping him. Even STILL, it wasn't easy. I wouldn't try to do it alone.
 
Best of Luck Wildsky!! Sorry your Muscovy boys are getting too rough. Our mallards drakes began doing the same to our chickens. Ornery critters. Maybe you can have your dh and friend do the first ones and next time you can do a bit more as you get use to the idea and enjoy the taste of your own home grown meat. We did enjoy our mallard for dinner so much that we are now seriously considering raising Muscovies for meat this spring.
We have two young cockerals we need to process this week and though I dislike the idea of killing them, (they are soooo pretty) the flock will be happier with a few less boys harrassing the girls and we do get to enjoy some chicken and noodles. Keep us posted and let us know how delicious those ducks turn out. I never thought I'd be able to eat one of our chickens or ducks, dh didn't think I could either, but once I did it really helped. No more extra cockerals going to waste, so to speak.
