Duck safe plants

Hi there everyone. We are almost finished our new duck run, which is fairly large. Such a large amount of chicken wire can be quite an eye sore. I am trying to figure out what I can safely plant around the run to improve the look. I am really curious about climbing roses. Does anyone know if they are safe for the ducks to eat,roses and foliage? Any suggestions would be highly appreciated. Thanks =)
 
You could espalier a dwarf weeping mulberry or hardy kiwi. Honeyberries (haskap) are nice, low shrubs. Blueberries are pretty. Red and gold amaranth are annuals but are gorgeous. And all of the above can be safely eaten by ducks and people.

The problem with having plants around that ducks can safely eat is that they tend to eat them to the ground. Just ask my poor sedum - oh wait, you can't because the ducks ate it! It's coming back now that it's spring and I made sure to take some cuttings of it to transplant somewhere where the ducks can't get to. The ducks absolutely owned my garden last year so this year I'm going to put 3' high chicken wire around it to try to keep them out. (Notice I said "try" - my husband thinks I'm hilarious for even bothering.)
