Duel purpose chick questions

We decided to try duel purpose chickens this year. They are about 6 weeks old now and our local feed provider is out of starter/grower until spring. I was told that game bird starter/grower would be ok to feed them. I usually feed my laying hens pellets once they start to produce eggs. But since these chickens will be used for meat and eggs what kind of feed should I use and when should I switch from starter grower? Also should I stay with crumbles or move to pellets like I do with my other hens? We plan on butchering all but one rooster and a few hens at about 18 weeks. Then keep the rest for eggs and hopefully a new batch of chicks.

I know feeding chicken layer feed to young birds can cause a problem due to it's high calcium content but I'm not familiar with the game bird starter/grower. Your best bet for getting answers about feeding your chicks would probably be found on this forum:
